Pizza Napoletana Masterclass Program according to the AVPN with FRANCESCO SPATARO
  • History of pizza and definition of Pizza Napoletana.
  • An explanation of the correct method according to the AVPN
  • Details of the ingredients and pizza dough (which flour to use …,why we store the dough overnight…, and more)
  • Pizza dough recipe and hands on techniques : how to prepare the best pizza napoletana dough by hand,
  • Detailed  wood fire oven explanation, how to use and cook with this powerful tool.
  • Hands on dough stretching and pizza preparation.
  • Pizza toppings, correct dose and matching.
  • Hands on pizza preparation and cooking alongside the chef.
  • Eating your delicious Pizza creation with beers/wine provided.
  • The art of bread making with any leftover dough.
  • THIS CLASS HAS BEEN SCHEDULED FOR 4 HOURS BUT IS LIKELY TO TAKE LONGER THAN EXPECTED FROM PAST EXPERIENCE. PLEASE ALLOW EXTRA TIME AS FRANCESCO IS A TRULY PASSIONATE CHEF AND THERE IS A LOT TO LEARN.
