How did the spark start?
Every year I pack my case and I go back home in search of something new.
It is hard to explain but I am never satisfied with “knowing enough”. My goals are always bigger and I have an insatiable appetite for knowledge which is what separates Cucina Italiana Cooking Classes from the rest. And once knowledge is found I never think the glass is full enough. That is probably the simplest way to describe my passion and determination to deliver more.

Playing with fire. Playing with the heat and the different ways you can cook with fire or embers. Seeing the ceiling of your oven changing colours indicating it is the right time to cook your pizza.

It is here, at Cucina Italiana, where you will make the best Italian breads.

When it is burning hot it is time for “Le Streghe,” the witches crackers from Bologna, the master invention of my teachers the Simili Sisters. As time goes by… let me take you right down south, to the island of Sardegna to make the traditional Pane Carasau. And there is more, much more. Grissini from Torino and individual bread rolls.

Wrap up your sleeves, this class is really a big trip full of flavours and totally hands on.

This is simplicity at its best as all Italian food should be.
