- 1 1/2 cups sugar
- 1 1/2 cups water
- 1 cinnamon stick broken into pieces
- 4 cloves
- 1 large lemon sliced
- 6 large pears peeled and cut into eights
- Make a syrup with the sugar, water, cinnamon, cloves & lemon.
- Poach the pears in the syrup.
- Remove the pears and discard the lemons.
- Reduce the syrup by half, strain and set aside.
- Place pears in a single layer on a foil-lined oven tray and bake at 170c until caramelised and golden.
- Return to the syrup and cool.
