SPUMA DI SALMONE AFFUMICATO:
- 300g smoked salmon
- 150g mascarpone
- 12 spoons of fresh cream
- 5-6 spoon of gin
- 5-6 spoon of lemon juice
- Fresh bread
- Salt and pepper
- Place the smoked salmon in a mixer & the lemon juice.
- Add the gin and turn the mixer on.
- Add now the mascarpone and turn on the mixer.
- While the mixer it is on add the fresh cream.
- Also add salt and pepper.
- If it is a bit bitter add some sugar.
- Place it on a fridge and let it rest.
- With an ice cream scoop place 2 scoops of the mousse on a plate.
- Place the bread on the side.
- You can also serve with fresh rocket.
