Christmas Best Memories: Orange and Almond Cake.
2 large oranges
250 sugar
250g ground almonds ( I use almond meal )
1 teaspoon baking powder
6 eggs
Boil the oranges in water for 1-1/2 hours. Drain off the water and blend
the oranges in a food processor (I use a Bamix).
Add all the remaining ingredients and mix thoroughly with the orange pulp.
Pour into a buttered 23cm spingform tin (I also line bottom with baking
paper)and bakke in a preheated oven for an hour. (I would check cake
before this to see if cooked and ensure it doesn’t burn a little on top).
Syrup
1 orange finely sliced
220g (1 cup) sugar
125ml (1/2 cup) water
Place the orange slices into a saucepan. Add the sugar and water and cook
over medium-high heat until sugar has melted. Continue to cook until the
liquid becomes syrupy. Remove from heat and set aside until required. (I
always seem to cook it for those few extra minutes and the syrup becomes
almost like toffee when cold, however, it tastes great!)
Can spoon the syrup over the cake or serve separately with the oranges
slices and cream.
